In the manga, everyone was able to see Ryuk and tried to shoot him to stop him from writing what they thought was their names, but it ended up being Light’s name. So, they knew how he died.

In the anime, it’s possible, unless they decided to give him an autopsy. And as for not wanting to tell Sayu about shinigami: that too is possible.
